The main opponent to the all mighty beef burger, in all its greasy, heavy majesty is the underdog chicken sandwich. Chicken sandwiches and their contemporaries, the chicken burger have become increasingly popular at all fast food chains and smaller bistros as well.
It's strange to think of how popular chicken is when cooked as a meal, with rice, pasta or what-have-you and then see it take a backseat to beef at every restaurant. With Santa Fe sandwiches becoming more popular though and chicken burgers becoming increasingly large and imposing, much like their beef brethren, there seems to be a shift in power on the rise. Chicken is a more versatile meat, being able to be flipped in ways that beef often cannot and accept flavours that are often foreign to beef.
