Eataly's Dove-Shaped Easter Cake Features No Eggs or Butter
Laura McQuarrie — March 27, 2018 — Lifestyle
To better meet the growing demands of plant-based consumers, Eataly is now offering a Vegan Easter Cake that's inspired by the 'Colomba di Pasqua," the traditional Italian "Easter Dove" cake.
Classically, making the festive cake calls for ingredients such as flour, eggs, sugar, butter and natural yeast, but the alternative offered by Eataly is made without eggs and butter. True to the style of the classic Easter cake, the dough is shaped into a dove-shaped pan and left to rise for a period of 30 hours so that its final consistency is light and fluffy.
Although the cake can be enjoyed on its own, Eataly also recommends pairing it with fresh berries, sweet spreads, a drizzle of dark chocolate or even a dollop of vegan whipped cream.
