Noodles & Company's New Zucchini Shrimp Scampi is a Low-Carb Option

With a growing number of consumers cutting back on carbs or eliminating them altogether, Noodles & Company has debuted a low-carb Zucchini Shrimp Scampi dish. Made with Zoodles instead of actual pasta, the dish puts a healthy twist on comfort food.
The new Shrimp Scampi dish from Noodles & Company consists of Zoodles tossed in a light scampi sauce with shrimp, roasted zucchini, and Roma tomatoes. The whole thing is then topped with Parmesan cheese, parsley, and a wedge of lemon. For those unfamiliar, Zoodles are pieces of spiralized zucchini that serve as a low-carb alternative to pasta.
Of course, for those who are not cutting back on carbs, Noodles & Company is also offering a new Penne Rosa with Shrimp dish, which consists of penne noodles in spicy tomato cream sauce.
