Spirit of Yorkshire Distillery has proudly unveiled its latest creation: a new STR-finished whisky called Filey Bay. STR, which stands for Shaving, Toasting, and Re-charring, represents a sophisticated cask treatment method pioneered by the esteemed late Dr. Jim Swan. This innovative technique involves meticulously reconditioning red wine casks to infuse distinctive characteristics into the whisky.
This unique distilling method imparts unique nuances to the whisky, ensuring a harmonious maturation that preserves the fruit-forward essence inherited from the wine while simultaneously allowing the delicate interplay of sweetness and spice from the oak to peek through.
“The key difference between Filey Bay STR Finish Batch #4 and previous batches is the increased time in cask, both ex-bourbon and STR," said whisky director Joe Clark.
