Pregnant women are advised against eating sushi but thanks to Kanetsu Sushi, this beloved food no longer has to be off-limits to expectant mothers. This sushi innovation was developed by a sushi chef, an obstetrician and a gynecologist, and it gets its name from the word "Kanetsu," meaning "heated" in Japanese.
Boxes of Kanetsu Sushi feature chef-selected sashimi-grade fish from the market, which is then heated until the middle reaches an optimal 75°C (167°F) temperature for more than a minute to limit the chances of food poisoning. Following this, the sushi undergoes a quick freeze in a liquid-based freezer for the purposes of preventing bacterial growth and retaining the utmost freshness of the fish without causing the formation of excess ice crystals.
This pregnancy-safe sushi is set to go on sale as of November for ¥6,900 ($46 USD) per box.
