Thanks to precision fermentation technology, Germany-based QOA creates cocoa-free chocolate that is said to taste and feel just like conventional chocolate. The technique that is used to create these bars is said to perfectly replicate the taste and smooth texture of regular chocolate, and food scientist and QOA co-founder Sara Marquart told Fast Company that “We analyze the fingerprint of raw cocoa, fermented cocoa, roasted cocoa, to understand what is making cocoa this unique little bean that has so much flavor." The company's chocolate alternative is described as being 10 times more sustainable and 20% cheaper than conventional chocolate.
With its ethical and sustainable approach to chocolate, the company is on a mission to replace chocolate in mass-market products. Pilot tests with major confectioners are now scheduled in 2022.
