Chef Maneet Chauhan is opening a brewery where the beers will feature the flavors of India in brewed creations like Mango IPA and Coconut Brown Porter.
Maneet Chauhan -- a judge for Food Network's 'Chopped' -- first had the idea to brew her own beer when she was coming up with beverage pairings for her restaurant, the Chauhan Ale & Masala House. She was unsatisfied with the selections that usually accompany Indian cuisine: sweet wines or cocktails that cut the spice in the dishes. Instead, she wanted to accentuate the heat and complexity of her menu. She began experimenting with brewing beer out of her home in Nashville, Tennessee. The beer has now become popular enough that Chef Maneet Chauhan is opening the Mantra Brewery to package the beer for ale lovers to enjoy at home.
