Seven Stills of San Francisco is continuing its innovation of whiskeys with its newest collaborative project known as Tomahawp Whiskey. The unique liquor starts life as a double blasted IPA, courtesy of Alvarado Street Brewery, before being placed in new American oak casks. The IPA is then left to age, as Seven Still is quite adamant in not doing "anything post-distillation," but the liquor is "aggressively dry hopped in the secondary fermentation."
The flavor on Tomhawp Whiskey is quite aggressive, but not in an overdone way. The nose finds plenty of musky and peppery hop aromas, but also finds hints of mint, chocolate, green apple and coffee underneath the bitterness. The palate features a surprising note of tobacco and heavy herbs, but also features hints of clove and burnt toast. The finish is slightly sweet, but is also undercut with spicy black pepper and tantalizing notes of coriander. Tomhawp Whiskey is bottled at 94 proof. The liquor also comes with an accompanying IPA.
