The MOCKing Bird — a new plant-based cart launched by Kayla Lamberson — announced its launch this June in Rose City Food Park in Portland, OR. The new quick-serve restaurant plans to serve vegan fried chicken served in sandwiches, waffles, grilled cheese sandwiches, and mac and cheese, among other menu items.
“Starting my own cart/restaurant just seemed like a perfect calling of mine,” Lamberson said. “I absolutely love my new journey and I only hope that I can continue to make an impact while providing comforting food to the community.”
The vegan brand is dedicated to helping animals and recently donated 10 percent of its profits from the Happy Valley Farmers Market to rescue group Rabbit Advocates.
