Made by Beth from the food blog Tasty Yummies, the Honey Balsamic-Roasted Figs and Toasted Pistachio Coconut Yogurt Parfaits unusually incorporate figs, which are currently in season.
The figs' tart, syrupy and sweet flavor pairs perfectly with tangy and creamy yogurt. The toasted pistachios are a great touch, but you can also substitute for your favorite nut or seed if the pistachio isn't your thing. The parfait recipe includes homemade coconut milk yogurt, although goat milk or greek yogurt would also work. Balsamic vinegar, honey and lemon zest round the dish out.
