Palette Cafe is the combination of Saratoga Cafe and coworking space Palette—both businesses are owned by Catherine Hover who has recognized the important and complementary balance that is established here. After its initial success in Saratoga, Palette Cafe is opening its second location in Schenectady—in a space that measures more than 4,600 square feet. In addition, the two-story location will feature a back patio.
Originally planned to welcome customers in May, the COVID-19 pandemic threw a wrench in the plans and delayed the opening for mid-August or September. Quick to adapt, Hover has also shifted the business model a bit to include take-out from the cafe and requiring individuals to pre-book their seats at the coworking space through a dedicated app.
