The Night Before Christmas Inspired These Tre Stelle Dishes

Four Canadian chefs from across the country worked with Tre Stelle to create festive dishes inspired by The Night Before Christmas, one of the oldest and most beloved Christmas poems ever. The chefs created inspiring appetizers, entrées and desserts for holiday feasts based on the Clement Clark Moore poem that was first published in 1823.
In all, there are twelve chef-created recipes, each of which features cheeses from Tre Stelle. Chef Tristen Katcher of Vancouver's Homer Street Café & Bar was specifically inspired by the part of the poem that mentions freshly fallen snow to create a festively colored bitter greens beet salad topped with a layer of crumbled white feta.
