Created by Chef Thiago Silva for Union Fare bakery, the birthday cake croissant is a colorful and celebratory take on the classic French pastry. Located at the bakery inside the Union Square restaurant in New York City, the experimental and enviably Instagram-worthy baked good is just the latest croissant creation to come out of the Big Apple (also the birth place of the cronut).
From the outside, the birthday cake croissant does not look remarkably different from your average croissant, but subtle rainbow dots can be detected. Rainbow hued sprinkles are baked directly into the dough, giving the inside a bright and colorful effect. Not overly sweet either, the croissants are dusted in a light pink powdered sugar as well.
