'MyForest Foods,' the New York-based meatless food technology company, announced the opening of a new vertical mycelium farm powered by the 'AirMycelium' technology. AirMycelium is a proprietary method of growing mycelium created by MyForest Foods and 'Ecovative,' a subsidiary of the company, in 2020. By leveraging this technology, the resulting vertical farm known as the 'Swersey Silos' will produce enough food to serve more than one million customers by 2024.
The Swersey Silos farm will primarily produce mycelium for use in MyForest Foods' 'MyBacon' meatless bacon substitute. This mycelium-based alternative pork product is flavorful and near-indistinguishable from its animal-based counterpart, resulting in a sustainable, ethical alternative to animal farming.
MyForest Foods announced two new partners for the purpose of collaborating on the Swersey Silos. These partners are the 'Berkshire Food Co-op' and 'Cornucopia Natural Wellness Market,' which are noteworthy retail partnerships that will contribute to the scalability of MyBacon. The companies hope to effectively disrupt the bacon market as they continue to expand.
