'NovelSweets' Plant-Derived Sweetener is 10,000-Times Sweeter Than Sugar

The 'NovelSweets' protein-based sweetener has been developed by researchers at Germany's Fraunhofer Institute for Molecular Biology and Applied Ecology IME as an ultra-sweet, plant-based solution. The sweetener was developed through a joint research project with industry partners including MetaX Institut für Diätetik and Candidum in a bid to support German Federal Ministry of Food and Agriculture to help reduce food sugar content. The sweetener is reported to be 10,000-times sweeter than sugar, while also having a pleasant sensorial profile that doesn't have any unwanted aftertastes like other sweeteners on the market.

Fraunhofer IME Researcher Stefan Rasche spoke on the 'NovelSweets' protein-based sweetener saying, "A single gram of the substitute is as sweet as about 10kg of sugar. This means that by working with our partners, we have managed to develop an SP that is about 10, 000 times sweeter than table sugar. A typical cola contains about 106g of sugar per litre. That’s equivalent to 1,800 kilojoules (kJ). Just a few milligrams of our SP is enough to achieve the same level of sweetness, so the calorie content can be significantly reduced."
