London bar Lyaness is introducing a playful and innovative cocktail list based upon seven key ingredients that have been manipulated into exciting new forms. The new drinks on the menu include the Peach Emoji, Vegan Honey, Lyaness Tea-mooth and Golden Levain.
While Vegan Honey replicates the honey-making process with enzymes to create inverted sugar syrups that take inspiration from the taste of different kinds of honey around the world, Lyaness Tea-mooth introduces an alcoholic "vermouth" made entirely from tea that was made possible as part of a collaboration with Rare Tea Company. With Golden Levain, Lyaness explores the flavor of yeast that runs through Champagne, bread, pastry and beer.
In the spirit of experimentation, customers are invited to use ingredients to enhance their favorite drinks.
