In collaboration with Nobu Matsuhisa of Nobu restaurants, Laura Santtini created a unique vegetarian flavor enhancer based around umami, which is also known as the fifth taste.
The Taste #5 Umami Paste Vegetarian is meant to be used as a flavor enhancer for savory cooking. The sauce is made with an unusual blend of ingredients, including a base of Japanese miso that's paired with shitake mushrooms, soy sauce, matcha green tea, yuzu and ginger, which creates a flavor that falls somewhere outside of the most common sweet, savory, salty of bitter categories.
As far as its applications,t he versatile vegetarian paste can be used in a number of ways to add complexity and depth to everything from stir-fry dishes and salads to dips, rubs and marinades.
