Cascatelli by Sporkful is a new pasta noodle shape that's been in the works for three years and it represents the collaborative efforts of Sfoglini and James Beard Award winner Dan Pashman, who created and hosts The Sporkful food podcast.
The new pasta noodle gets its name and shape from waterfalls and it was intentionally "designed to maximize the three qualities by which Dan believes all pasta shapes should be judged." These three qualities include soaking up sauce, staying on a fork and being satisfying to sink teeth into. To show off the best qualities of the noodles, Sfoglini recommends recipes like Cascatelli with Double Pork Ragu.
