
SAN-J Launches its TAMARIMANIAC Line in the U.S.

SAN-J, a Japanese soy sauce producer with a history dating back to 1804, has introduced its 'TAMARIMANIAC' line, further expanding on its legacy of traditional fermentation methods passed down over eight generations.
The first set, the 'Premium Crafted Tamari Set,' features "Double-Brewed Tamari (saishikomi); this variety is made by fermenting soybeans in brewed tamari, rather than brine, which results in a rich, intense flavor with twice the umami of regular soy sauce." Notably, this double-brewing method is rare, with only 1% of soy sauce produced using this process.
Additionally, the set includes 'Seaweed Tamari,' a blend of "kombu, shiitake mushrooms, and rice-koji, which is fermented to create a flavor profile similar to traditional dashi."
In addition to these offerings, SAN-J provides a 'DIY Tamari Dashi Kit,' allowing users to craft their own dashi with customizable ingredients.
