State Fair Treats is the brainchild of veteran food vendor Isaac Rousso, who has gained a following for his ingenious deep-fried dishes. His new pop-up shop will look like a retro dinner and it will be located inside a Walmart in a Dallas suburb. The shop will serve classic state fair dishes such as funnel cake fries and corn dogs, in addition to more innovative creations such as stuffed hash browns and Rousso's new cookie fries.
With plans to open more than a dozen locations in the coming year, Rousso's off-beat pop-up could bring state fair dishes to the mainstream.
