This potato pizza with kale pesto is a new take on a fun weekend tradition. Rather than relying on the trusty pizza delivery guy come Friday and/or Saturday night, this potato-topped pie is a homemade dish for the family to enjoy. Created by Liz at the food blog Floating Kitchen, the unconventional kale pesto and potato pizza recipe takes homemade pizzas to the next level.
Using either from scratch or store bought dough, the pizza is covered in thinly sliced yellow potatoes, shredded mozzarella cheese, shredded fontina cheese and red pepper flakes. In place of the more often seen red sauce, this main introduces a kale-integrating pesto sauce. While this might give it an extra green look, it also amplifies the taste.
