Tom Cat Bakery, the iconic New York City bakery and founding member of the artisan bakery movement, has just announced the debut of a lineup of brand-new artisanal Japanese milk bread products for retail and foodservice.
For those unfamiliar, Japanese milk bread (also known as Hokkaido milk bread or shokupan), is a soft white bread that's moist, but not gummy, with just the right amount of sweetness. To develop its own artisanal Japanese milk bread products, Tom Cat Bakery has worked with experts at Yamazaki Baking of Japan to create bread that boasts that signature springy and fluffy texture. Heavy cream and honey are also added into the bread to give it that rich flavor and perfectly balanced sweetness.
In addition to a sandwich loaf, Tom Cat Bakery's new lineup of artisanal Japanese milk bread products also include a seeded pullapart roll and a burger bun.
