Located inside the URSO boutique hotel is The Table, a new gastronomic pop-up restaurant that brings cuisine from across Spain to Madrid. In order to do this, the pop-up has a rotation of Spain's six best chefs, who will turn the eatery into a version of their own restaurant for a month. Over the span of six months, the restaurant will get a complete overhaul that changes the look, feel, tone and of course, the menu as each chef takes over the space.
If you were to stop at The Table now, you'd find that the experience mimics dining at Etxanobe in Bilbao, featuring dishes by Michelin-starred chef Fernando Canales. Currently on the menu, there's items like mango tartar, marinated fillets of mackerel with red pepper, foie gras and a coffee jam spoon.
