To add to its line of coconut flour tortilla chips and tortillas, The Real Coconut debuted its new line of plantain flour cookies at Natural Products Expo West. These new cookies are made with 100% plantain flour, which makes them an easier-to-digest alternative to flour, especially as the formula includes no fillers, starches or gums.
Plantains are beginning to emerge as a sustainable source of gluten-free, grain-free starch that is also a prebiotic. As of May, the plantain flour cookies are set to be available in single-serve packages in flavors like Hemp Raisin, Ginger Molasses and classic Chocolate Chip.
Daniella Hunter, who founded The Real Coconut and serves as the director of The Belize Sustainable Development Company notes: "This development revolutionizes baking by disrupting an age-old industry, and my mission is to bring plantain flour and plantain flour products to the mainstream consumer while supporting and encouraging indigenous communities to grow plantains as a food source where they grow like weeds with little need for water, and no pesticides."
