Ilegal Mezcal Debuts its New Reposado Caribbean Cask Finish

Ilegal Mezcal has introduced a new addition to its range of artisanal spirits: the 'Ilegal Reposado Caribbean Cask Finish.' This limited-time release uniquely blends traditional mezcal production techniques with an innovative aging process using Caribbean rum casks.

To create this expression, the process begins in Oaxaca, where "the mezcal is produced in small batches and initially aged for 4 to 6 months in American oak barrels—following this period, the mezcal is then transferred to 215 barrels that previously held 8-year Caribbean rum, where it undergoes a finishing process of up to two months." As a result of this final aging stage, the Caribbean casks introduce flavors of "tropical fruit, warm spices, and hints of caramel and butterscotch," which work to enhance the agave’s natural characteristics.

Ultimately, the outcome is a mezcal with added intensity and a complex taste profile, making it suitable for enjoying neat or cocktails.
