Three New Orleans-based companies—Ochsner Eat Fit, Unrefined Bakery and Swerve—teamed up to reinvent the classic Mardi Gras cake with a better-for-you version called the Eat Fit King Cake. Glazed with purple, gold and green icing, the cake is as colorful as ever but boasts a clean list of ingredients and a recipe that's dairy-free, naturally gluten-free, grain-free and even suitable for those following the keto diet thanks to it being low in carbs.
When creating the Eat Fit King Cake, the collaborators decided to leave out all artificial food dyes, white refined flour and sugar, since Swerve's plant-based, low-glycemic, zero-calorie sugar replacement is used in its place. In comparison to the classic King Cake, this reinvented version boasts 93% fewer carbohydrates, plus more protein and fiber.
