&Beer is a new pop-up concept from Overthrow Hospitality that matches beer with innovative plant-based food concepts. This series got its start with Mushroom & Beer, a concept from chef Juan Pajarito, a former Line Cook and now Executive Chef at Overthrow’s vegan fine-dining concept Avant Garden.
Featuring mushroom-focused dishes, this concept explores four different ways the Hen of the Woods mushroom can be enjoyed. There's oyster mushrooms in a tempura beer batter served with ponzu hot sauce; beech mushrooms made decadent with cauliflower cheese and nori butter; and enoki mushrooms with smoked apple barbecue sauce.
The pop-up experience, of course, wouldn't be complete without beer, and the English-style vegan craft beer bar Proletariat (another concept form Overthrow Hospitality) offers just the right pairings for the umami cuisine.
