At Hacienda Patrón in Jalisco, Mexico, the agave piñas used to manufacture the spirits are roasted for seven days in underground stone pits using mesquite charcoal. The liquid is produced in small batches, with the agave being crushed through a tahona wheel distillation process to create its unique taste.
