For those unfamiliar, mee krob (also spelled "mi krop") is a staple on many Thai menus. The dish consists of thin, crispy-fried rice noodles that have been tossed in a sweet and sour sauce. Trader Joe's buyers were inspired to create the dish at home after enjoying it in Thailand and ultimately came up with what is now the Mee Krob Snackers. This shelf-stable snack consists of deep fry rice noodles layered with a flavorful sauce made from tamarind paste, vinegar, chili sauce, lime juice, and sugar. Best of all, the vegan-friendly noodles are cut into one-or-two-bite squares making them the perfect savory snack for any time of day.
