Mumbai-based food tech startup Evo Foods is disrupting the Indian egg market with a liquid egg product that is 100% plant-based and animal-free. The recipe for the innovation includes the use of plant proteins derived from lentils. The final result is an "evolved egg replica" that is free from cholesterol and antibiotics.
Evo Foods was launched in 2019 by founders Kartik Dixit and Shraddha Bhansali. The Indian food tech startup has been backed by US-Asia impact venture firm Big Idea Ventures and recently, the company welcomed "Ryan Bethencourt as its first angel investor and advisor."
Still in development, the liquid egg product is surely going to be a game-changer and the latest innovation in food biotechnology, ultimately ensuring a future of sustainability.
