The new hotel gardening program aims to reduce overall food waste by at least 30 percent. To do so, some hotels will create and maintain vegetable gardens directly on hotel property. The chain will also enact a more strict restaurant policy that requires hotel eateries to keep track of how much food is being thrown away. This will extend to menu changes that will include more local produce and smaller courses. All of these efforts are designed to make the chain more sustainable and reduce its overall environmental footprint.
While the idea of urban gardening is not exactly new, AccorHotels' initiative demonstrates how big companies are beginning to embrace such practices.
