London-based whiskey maker Bimber Distillery has announced the release of Apogee XII, a pure malt whiskey that has been aged in ex-Bimber and Bourbon barrels for 12 years. According to the company, the new expression aims to celebrate the art of blending by offering customers a sophisticated balance of flavors that provides a dsintcitly layered tasting experience.
To create the Apogee XII, the distillery sourced single malts from the UK's Highlands and Speyside. These whiskeys were then matured for 12 years in ex-Bimber and Bourbon barrels before undergoing meticulous blending to enhance their flavor profiles.
"It is no secret that as a craft distillery, our inventory of casks is growing but is still relatively small. Apogee has been created as a response to the burgeoning demand for our products – both as a continually available expression and as an extension of our passion for the fine art of blending," said Bimber Distillery spokesperson Matt McKay.
