The concept of microwaveable desserts is something that's very interesting to me because of their ability to be made in such a short amount of time and this carrot cake recipe is just so. After combining the ingredients, the dessert is simply slide into a microwave oven for a few minutes to complete the process.
I think I need to start expanding what I do with my microwave because this recipe and others that I've seen recently are beginning to give the small -- but mighty -- machine a run for it's money. There's literally a hundred and one things to whip up in a pinch in the microwave and my favorite part is that they're every bit as delicious as the ones that are prepared the traditional way using an oven.
