The Water Scale by Muzaffer Kocer & Ayca Guven is an eco-friendly food scale that operates on the Archimedes' Principle. The scale uses displaced water to measure the weight of the food thus reducing the amount of energy-wasting materials that go into other typical food scales.
An added bonus to the Water Scale is that there is no electricity needed, which means that there is no energy consumption which makes this water-based scale a greenovation. When I have my own kitchen to fill with appliances, this scale is definitely on my list.
