As its name suggests, the spicy tuna roll is a type of sushi that is often served in a convenient roll but Pinch Food Design took it upon itself to reinterpret the dish with a fresh new architecturally inspired format. The recreated dish sits on a "Jenga-like building block" base of dark, pressed forbidden rice that's topped with a layer of spicy tuna and micro shiso leaf. With these changes to color, shape and texture, the familiar sushi dish is transformed to offer an entirely new eating experience.
As well as being an aesthetically pleasing sushi dish, this combination of pressed forbidden rice and spicy tuna is also said to hold together for hours longer than traditional sushi rice creations.
